A recipe that enables you to enjoy
small ?shes in their entirety
1.Start heating the frying oil.
2.Thinly coat the smelts with some ?our.
3.Add the milk to the remaining ?our and mix together,
then dip the smelts into the mixture.Coat the smelts
with breadcrumbs and press them ?rmly.
4.Deep fry the smelts in the oil at medium temperature until golden.
5.Cut the turnips into bite sizes.Place them in a microwave-
ovenproof dish and sprinkle 3 tablespoon of water onto them and
cover with the ?lm,then cook in the microwave oven for 4 minutes.
6.Roughly chop the tomato.Finely chop the scallions.
Cut the cucumber into very small cubes.Put these
ingredients together in a bowl,add the pickling liquid,
the salt,and the pepper and mix to make a sauce.
7.Place the smelts on a serving dish,pour the
sauce over them,and serve with the turnips.

6 smelts
4 tablespoons ?our
4 tablespoons milk
4 tablespoons breadcrumbs
Oil for deep frying (rapeseed,perilla,sun ?ower,etc.)
1 tomato
4 small pickled scallions
4 tablespoons scallion pickling liquid
1/4 cucumber
4 small turnips
Small amount salt and pepper
