Why has the difference between saturated fatty acid and polyunsaturated fatty acid become such a big issue like it is now? It is because of the result of the animal experiment. If we have an animal keep having saturated fatty acid, the cholesterol goes up, and it goes down if the animal keeps having polyunsaturated fatty acid for some reason. Cholesterol has been a big issue from a long time ago in the U.S. and Europe, so when this experiment result was released, polyunsaturated linoleic acid started to attract attention as a “good oil.”

For instance, the cholesterol of a rat rises when saturated paltimic acid is given, but then, if the rat have the same quantity of linoleic acid, the cholesterol goes down about a half. So that means, when you have paltimic acid, the cholesterol goes up unless you have linoeic acid twice as much.

Many people believe they can cut cholesterol by trimming off the fat from the meat when they eat. However, as saturated fatty acid is also contained in red lean meat, it still raises cholesterol. Thus, it can be thought that if you have meat, it is better to have linoleic acid twice as much as the saturated acid contained in the meat. Supposing 100g of meat contains 30g of stearic acid, you have to have 60g of linoleic acid to keep the cholesterol stable. But the truth is, it is just a armchair thory of scholars. If you actually take 60g of linoleic acid, that is too much calories. It is nonsense to have even more oil every time you eat meat.

Animals have been used to research the function of fatty acid because people cannot drink fatty acid just to see what will happen. Yet, the result cannot be accurate because there is a clear difference between using the oil that we use for cooking and pure fatty acid we use for animals. Please keep this fact in mind while using the data for cooking.

It is better to boil or grill when you eat meat. Don’t forget to eat a lot of vegetable as well. It is important to take vegetable fiber to degrade the gut absorbtion, so that you can create the condition that cholesterol is hard to get into your body.
